5.6 tons hand-harvested from Amazing Grace Vineyard on September 23rd in excellent condition at 22.8 Brix and 3.3 pH. Whole-cluster pressed and fermented in stainless steel with Rhone 4600 yeast between 55-60 degrees Fahrenheit for 18 days. Aged on its fine lees for 7 months in tank and bottled unfined and plate-and-frame filtered in July 2016. Round, luscious, and open knit, with the rich texture of a Chardonnay while displaying a much more distinguished fruit character redolent of canned peaches, apricot, and honeysuckle. Drink now with rich seafood.
